This process comprises the steps consisting in: (a) crushing kiwi fruits in order to separate the pulp from the waste essentially consisting of the skin, the hair and the seeds; (b) carrying out a tangential filtration (microfiltration or ultrafiltration) of the pulp on inorganic membranes having a mean pore diameter of between about 10<3> mu m and about 10 mu m; and (c) aseptically packaging the sterile permeate obtained in the preceding step. The juice obtained constitutes a so-called "pure juice" beverage or alternatively a beverage base, when it is mixed with other natural ingredients, which are also of nutritional and dietary importance, such as whey from the cheese industry and from the casein industry, once it has been sterilised.
