<p>The process consists in heating foods by sending overheated steam, for a given period of time, to a low thermal conductivity container (4) where the foods are held. The overheated steam is instantaneously produced by sending water to a vaporization chamber (7a) housing a first electrical resistor (8) designed to cause the vaporization of water. The wet saturated steam thus produced then reaches an overheating chamber (15a) disposed above the vaporization chamber (7a) and housing a second electrical resistor (16). Steam is overheated in the overheating chamber (15a) and afterwards sent to the container (4) through a delivery duct (18) running into the inside of the latter through a valve union means(19).</p> |
