Deoiled lecithin containing 97% acetone-insoluble substance is added to a nutrient medium in an amount of 0.1-0.7% for yeast and of 0.3-1.0% for bacteria, and the nutrient medium which has been thoroughly mixed with lecithin is treated at 110-130 DEG C for 12-30 minutes and subsequently the medium mixed with lecithin and sterilised is inoculated with a starter culture used in the foodstuff industry. |
