PURPOSE:To provide the titled emulsion containing tocopherol, an acidic component, an organic acid monoglyceride, a gummy substance and a saponin at specific ratios, having excellent stability even in acidic state, keeping stable emulsified state even after long-term storage, having excellent dispersibility in water and applicable to food without deteriorating the taste and flavor. CONSTITUTION:The objective emulsified material contains (A) 1-60wt.% of tocopherol (preferably natural concentrated tocopherol), (B) 0.1-10wt.% of an acidic component (preferably L-ascorbic acid, citric acid, phytic acid or gallic acid), (C) 0.01-10wt.% of an organic monoglyceride (preferably acetic acid monoglyceride, citric acid monoglyceride, diacetyltartaric acid mono glyceride, succinic acid monoglyceride or lactic acid monoglyceride), (D) 0.01-20wt.% of a gummy substance (preferably gum arabic, etc.) and (E) 0.01-2wt.% of a saponin.
