PURPOSE:To make cultivated KOJI into relatively dense lump and to readily take out KOJI from a culture container, by laying an air-permeable sheet along the inner peripheral wall or the bottom wall of the culture container, placing a culture medium for solid KOJI on the sheet and cultivating KOJI. CONSTITUTION:An air-permeable sheet is laid along the inner peripheral wall of the bottom wall of a box-shaped or cylindrical culture container and a culture medium is placed on the sheet. Then a fungus is introduced and cultivated. Thin cloth such as bed sheet or gauze or a sheet of mesh structure may be cited as the air-permeable sheet. Grains such as soybean, barley, wheat or rice may be cited as the culture medium used. As the culture method, in the case of a mold, the culture is carried out in a chamber at 25-35 deg.C at about 90-100% humidity for about 30-80hr. By applying this method, solid KOJI such as protease or amylase having high titer of enzyme and a very small amount of various bacteria is obtained.
