PURPOSE:A light-colored composite seasoning composition obtained by adsorbing and purifying a blended extract of a main ingredient oyster extract prepared by using an oyster as a raw material and a supplementary ingredient extract from fishes, shellfishes, seaweeds, etc., and concentrating the purified solution without bitterness, astringency, scorched smell, etc. CONSTITUTION:A decolored composite seasoning composition, formed from (i) a main ingredient prepared by using an naturally occurring or raised oyster as a raw material and (ii) at least one supplementary ingredient extract selected from fishes, shellfishes, chicken bony parts, vegetables and grains and containing amino acids, proteins, saccharides and various minerals with >=5wt% solid content. The above-mentioned composition shows <=200 (S) integrated absorbance value defined by formula 1 [epsilon(x) is the absorbance measured by using a cell having 10mm thickness on an aqueous solution in 5wt% solid concentration at (x)nm wavelength]. |
