PURPOSE:To produce ice cream, by using unpolished rice milk obtained by immersing unpolished rice in water and heat-treating or steaming unpolished rice into a state of glutinous rice steamed with red beans, kneading, stirring the blend with water, adjusting to proper water content and pressurizing. CONSTITUTION:Flour of unpolished rice ground into a pulverized or fine powder state is immersed in water for >=3hr and heat-treated. As another method, unpolished rice is washed with water, steamed into a state to glutinous rice steamed with red beans, kneaded and mixed with water. The prepared rice obtained by any method is adjusted to 5-30% solid content, homogenized under >=300kg/cm<2> to give unpolished rice milk, which is used as a raw material to give ice cream. |
