A process according to EP-B 68221 for dehusking cocoa beans is combined with prior elimination of bacteria (sterilisation) in a pressure vessel (101) with the aid of, preferably superheated, steam, so that the moistening, generally necessary hitherto, prior to dehusking the beans is already carried out in the course of this treatment, cocoa beans which are already warm reaching the fluidised bed (8). At the same time, the downstream fluidised-bed treatment ensures a certain drying of the beans so that re-entering germs cannot multiply. <IMAGE>
