PURPOSE:To process mass-producible lobsters and obtain a thermidor-like high- class frozen and cooked food at a low cost, by containing a cut flesh of raw lobsters after decrustation in a fire-resistant tray in the form of a lobster, sprinkling a creamy seasoning and freezing the resultant flesh. CONSTITUTION:After decrustation of the trunk part, the flesh of a raw lobster is first suitably cut. The cut flesh with the head and tail is contained in a fire-resistant boat-shaped tray of a form adapted to almost the outer shape of a lobster with the head and tail. A creamy seasoning, such as white sauce, is subsequently sprinkled over the flesh part of the above-mentioned raw lobster and frozen so as to roast the flesh contained in the tray and afford the aimed frozen and cooked food. |
