PURPOSE:To produce tyrosine efficiently, by dissolving protein and a dissolution promoter in dissolving water, adding a protease, starting digestion reaction and stopping the reaction when the viscosity of the solution extremely rises and drops. CONSTITUTION:Protein such as acid casein and a dissolution promoter such as potassium carbonate or sodium carbonate are blended and dissolved in dissolving water, sterilized, then cooled and adjusted to a proper pH while maintaining temperature. Then pancreatin and protease derived from a ray fungus are used as proteolytic enzyme, dissolved in dissolving water to give solutions, which are added to the mixed solution to start digestion reaction. The viscosity of the solution is measured with time. At a stage when the viscosity extremely rises and drops, the solution is heated to high temperature, the enzymes are deactivated, the digestion reaction is stopped and the reaction solution is sterilized for a fixed time. The solution is cooled to <=5 deg.C, aged and tyrosine is isolated by centrifugation.
