PURPOSE:To obtain buckwheat-containing sweet jelly having a fresh flavor of buckwheat and characteristic texture, by adding bean jam to an aqueous solution of agar having dissolved sugar, boiling under heating, adding a specific amount of buckwheat flour, uniformly stirring, casting into a mold container, cooling and molding. CONSTITUTION:Agar is mixed with water and heated to give an agar solution, which is blended with a proper amount of sugar and heated to give an agar solution having dissolved sugar. Then the agar solution is uniformly mixed with bean jam comprising kidney beans or Vigna sinensis Savi ex Hassk. as a raw material and boiled under heating. Further, the mixed hot solution is blended with 1-1.5pts.wt. based on 1pt.wt. bean jam weight of buckwheat flour and uniformly stirred into a fluidized state. Then the blended solution in a fluidized state is cast into a desired mold container and directly cooled or allowed to stand, cool and further cooled to give the aimed sweet jelly of bean.
