PURPOSE:To obtain a food like KORO (sinew of buffer system) of whale which is hard to obtain, effectively utilizing sinewy meat, by subjecting sinewy meat of animals such as cattle successively to drying treatment, low-temperature oil treatment, oil-frying treatment and water-reconstitution treatment under specific respective conditions. CONSTITUTION:Sinewy meat of animals such as cattle, deer, pig or mutton is dried at 40-60 deg.C for 60-72hr preferably after removing fat and meat pieces from the sinewy meat. The dried meat is maintained in an edible oil at 40-80 deg.C for 5-8min, preferably taken out of the oil and fried in an oil at 150-200 deg.C for 4-8min. The oil-fried meat is taken out of the oil, immediately immersed in cold water of <=10 deg.C and reconstituted with water for 2-3 days to obtain the objective food. |
