PURPOSE:To efficiently form a pasta product, by continuously feeding a constant amount of wheat flour into a mixer, spraying pressurized water on the wheat flour, feeding the sprayed wheat flour into a screw conveyor and extruding the resultant kneaded wheat flour through a die while pressurizing the wheat flour. CONSTITUTION:In a material feeding step, a constant amount of wheat flour is continuously fed into a mixer 2 and pressurized water is simultaneously passed from a water feed pump 8 through a hollow shaft 9 and nozzle 10 and sprayed on the wheat flour in the mixer 2. In the next kneading step, the wheat flour sprayed with water is kneaded in the mixer 2, passed through a joint pipe 14 and fed into a screw conveyor 15. In the following pressurizing and forming step, the kneaded wheat flour is extruded through a die 18 while being pressurized by the screw conveyor 15 to form a pasta product. As a result, raw pasta, such as raw spaghetti or macaroni, rich in springiness and having excellent tough chewiness can be efficiently prepared. |
