A free-flowing lactic acid composition suitable for use in food recipes in which the acid preferably with an acid value of 800 or more, is absorbed on a suitable carrier providing a combined water content below 25% of the total composition. Preferably the carrier material comprises an extruded grain product. The composition is suitable for use as a bread improver. |
