Prepn. of ethanol from sol. starch by culture of saccharomyces diastaticus ATCC 13007 capable of secreting a high extracellar glucoamylase under submerged anaerobic conditions comprises inoculating the preculture of S. diastaticus grown on YPD medium into the fermen. medium (pH 4.0-4.5) contg. 17 sol. starch, 0.12 KH2PO4, 1.18 NaHPO4; 12H2O, and 1.0% yeast ext. and culturing for 4-5 days at 24-35≦̸C to provide 7.8% v/v ethanol soln..
