The invention relates to a device and method for filleting fish. This filleting is performed using an adjustable cutting blade, having a cutting edge mounted between a first and a second element, which are parallel and solidly attached to a base part opposite the cutting blade. The length and the curvature of the blade can be adjusted, in order to correspond to the thickness and weight of the fish to be processed. Application: industrial preparation of fish fillets. <IMAGE>
