PURPOSE:To obtain the titled film property imparting agent having a high polymer film-forming base, such as agar, starch or pullulan, low-molecular film-forming base having fructose and high polymer film-forming assistant, such as pectin or gelatin, as a composition with humectant property. CONSTITUTION:The aimed film property imparting agent, having (A) a high polymer film-forming base, such as agar, starch or pullulan, (B) a low-molecular film-forming base which is a blend of preferably fructose with sorbitol and (C) a high polymer film-forming assistant, such as pectin, gelatin or carrageenan, as a composition, obtained by blending the component (B) with the component (A), preferably at 6:4-4:6 ratio of the components (B) to (A) and useful for holding film property in a sheetlike food made from products of mountains and seas as a raw material, such as fish meat or vegetable, with a low moisture content. |
