A novel compsn. comprises (a) a taste intensifying substance R-S(O)-CH2CH(COR')NHR'' (I) and (b) a flavour enhancing substance R-S-CH(COR')NHCO CH2CH2CH(NH2)COOH (II) selected from glutathione and its salts, oxidised glutathione and its salts, glutathione sulphonic acid and its salts, cycloallin and its salts, lenitinic acid and its salts, des-glutamyl lentinic acid and its salts, methionine methyl sulphonium and its salts and cpds of formula (III) and (IV) and their salts. In formulae R=opt. unsatd. 1-4C aliphatic hydrocarbon gp. or carboxy-(1-6C alkyl; R'= OH or a carboxymethyl amino gp or salt; R''=H or a gamma-glutamyl gp or salt). (I) is e.g. glutamic acid, 5'-insosinate, 5'-guanylate or their salts. |
