PURPOSE:To obtain the titled product giving pottage-like excellent rice soup having good taste and flavor when dissolved in hot water without forming a pasty material, by heating raw rice under pressure, quickly releasing the pressure and crushing the rice. CONSTITUTION:Raw rice is heated under pressure (preferably at 200-300 deg.C under 10-18kg/cm<2> pressure) and the state of high temperature and pressure is maintained preferably for 10-15min. The pressure is quickly released and the product is crushed (to particle size of preferably 0.064-0.254mm) to obtain the objective rice soup powder. |
