PURPOSE:To impart a processed fish meat food with palatability, taste and flavor different from those of fish meat without losing the characteristic palatability of the fish meat, by adding an O/W-type emulsion to fish meat or a food prepared from fish meat and processing the compounded meat, etc. CONSTITUTION:An emulsifiable substance or an aqueous phase produced by dispersing or dissolving other water-soluble component in the emulsifiable substance is mixed and emulsified with an oil phase optionally containing dispersed or dissolved oil-soluble component and the mixture is optionally finely emulsified with a homogenizer, etc., to obtain an O/W-type emulsion. A fish meat or a food prepared from a fish meat is added with the O/W-type emulsion and a processed fish meat food is prepared from the mixture. Preferably, the amount of the O/W-type emulsion is usually about 10-100wt.% based on the fish meat and is selected to give a product having an oil content of about 10-35wt.%. |
