PURPOSE:To prepare a KONJAK (paste made from the starch of devil's tongue) food having improved color, taste, flavor and resistance to cutting with tooth, by extruding two or more KONJAK raw materials having different colors through individual nozzles and integrating the extruded raw materials by boiling. CONSTITUTION:For example, a raw material A and a raw material B are charged to hoppers of respective extruders and extruded into hot water with an extruder which enables simultaneous extrusion of plural raw materials and has a nozzle structure to extrude a raw material in the form of a square core and another raw material in circular form encircling the core. The KONJAK food prepared by this process has unique structure characterized by a KONJAK 1 having circular cross-section and including another square KONJAK colored to reddish yellow color with food yellow 4 and having color tone, taste and nutrient value different from those of the covering KONJAK 1. A U-shaped KONJAK, etc., may be used as the KONJAK 2 having different color. |
