PURPOSE:To prepare granular oolong tea, by grinding, kneading and granulating raw or withered tea leaves, withering the granulated leaves in an inert gas to effect moderate fermentation and drying the fermentation product. CONSTITUTION:Raw tea leaves are optionally withered in the sun or by artificial means to decrease the weight by about 10-20%. The raw leaves or withered leaves are crushed to small pieces by various means such as stirring, grinding, rolling, kneading, mixing, etc., to obtain a tea block wet with juice exuded from a part of the tissue of the tea leaves. The tea block is granulated with a granulator to granules of 3-10mm diameter. The granule is left standing in stationary state in a chamber replaced with an inert gas and having properly controlled ventilation, temperature and humidity conditions. The withering of the tea granule is completed by this process while suppressing the fermentation at the core part of the granule and promoting the fermentation at the surface layer of the granule. The withered granule is dried to obtain the objective granular oolong tea.
