Process for producing sugar cane wines or juice consisting in washing, draining and drying the said sugar canes before they are passed through a crusher 2 at the outlet of which the pH of the juices is checked in 3 in order to collect and select the said juices corresponding to a defined quality and convey them to a tank 5 from where they are delivered to a centrifugation 6 and filtration 7 station before being stored in closed fermentation vats 8, during their transfer between the centrifugation station 6 and the vats 8, the yeasts necessary for the said fermentation, which are contained in containers 15, are introduced continuously by means of at least one dosing pump 9, the cane wine or juice obtained being, after centrifugation and filtration in 13, distilled and rectified and the sugar cane alcohol obtained being conveyed and stored in suitable vats 16. <IMAGE>
