PURPOSE:To efficiently separate and produce N-acetylglucosamine 1-epimerase having physicochemical properties exhibiting a specific action and substrate specificity, by fractioning an extract from a porcine kidney. CONSTITUTION:An extract obtained from a porcine kidney is fractioned. N- acetylglucosamine 1-epimerase having physicochemical properties such as substrate specificities acting to N-acetylglucosamine and N-acetylgalactosamine and having action catalyzing the conversion between alpha-anomer and beta-anomer and acting to N-acetyl-D-glucosamine and N-acetyl-D-galactosamine, but not acting to D-galactose, D-xylose, D-fucose, D-maltose, D-ribose, D-arabinose, etc., is separated from the extract.
