PURPOSE:Raw eggs are dipped in a seasoning solution which is made slightly acidic by adding organis acids, then heated at a specific temperature to half- hardened eggs of good taste, storable for a long period of time, because the yolk is prevented from decoloring into gray. CONSTITUTION:A seasoning solution containing mainly salt, further potassium chloride, sugar and sodium glutamate is combined with organic acids such as citric acid or ascorbic acid to adjust its pH to 6.0-6.8. Normal raw eggs are dipped in the seasoning solution for 10-20hr, then placed into fresh water and heated therein at 60-70 deg.C for about 20min. |
