<p>After cooking in boiling water for 10 mins. the silky hairs adhering to the upper part of the artichoke bottoms are removed by means of a levelling tool applied under pressure to the artichoke held by a vacuum in a suction cup. The prepn. machine consists of a plate which rotates around an axis and carries a number of suction cups around its periphery; the cups themselves can also be rotated by toothed wheels. The tool is applied by a jack and by pivoting a lever it is driven across the curve of the artichoke, in co-operation with a roller and a cam track, to remove the hairy portion. Good sepn. is obtd. and the tool operates without removing any of the edible material.</p> |
