PURPOSE:To obtain a food such as creamy food, doughy food, ground fish-like food, TOFU (bean curd)-like food, custard pudding-like food, etc., preservable for a long period, by uniformly blending separated soybean protein with edible fats and oils, reducing starch hydrolyzate and water in a specific ratio, heating and coagulating. CONSTITUTION:A uniform mixture containing separated soybean A, edible fats and oils B, reducing starch hydrolyzate C and water in a weight ratio of the component A and B of 1-3:1, in 15-30wt% total amounts of the components A and B and in 2-7wt% component C is heated at about 80-140 deg.C and coagulated. The mixture can be directly used for food, can be preserved and preservable for a long period. By this method, a creamy food, doughy food, ground fish-like food, TOFU-like food, custard pudding-like food, etc., can be simply obtained and the food can be cooked by boiling, frying, roasting, etc., and dried to give a dried bean curd-like food. |
