PURPOSE:To obtain a salt reduced food having good flavor and fragrance, by using a milk mineral concentrate, prepared from milk or whey which is produced as a by-product in cheese manufacturing, as a salt substitute. CONSTITUTION:Milk such as cow's milk, goat milk, horse milk, etc., or whey prepared in cheese manufacturing is ultrafiltered, the filtrate is concentrated, cooled, precipitated lactose is removed. These operations are repeated more than twice and the resulting material is powdered to give a concentrate having high milk mineral component. Then in manufacturing a salt reduced food, salt is partially or totally replaced with the milk mineral concentrate. |
