PURPOSE:To obtain the titled Lentinus edodes in good shelf stability and in excellent productivity at low cost without chipping edge part of cap pileus of Lentinus edodes in a short treatment time, by cutting off stems of raw Lentinus edodes and freeze-drying the Lentinus edodes without moving. CONSTITUTION:Stems of raw Lentinus edodes are cut while leaving parts of the stems about 1cm from the cap pileus or totally cut off and, without moving, the cut Lentinus edodes is freeze-dried at <=-25 deg.C into about 10-20% water content to give the aimed Lentinus edodes. |
