PURPOSE:To impart emulsifying force higher than rhizo type-contg. phosphatide itself by treating aqueous suspension of phosphatide with phospholipase A2 and mixing this treated liquid with protein and thereafter drying this mixture to produce an emulsifying agent. CONSTITUTION:Aqueous suspension of phosphatide which is obtained by dispersing or dissolving 1pt.wt. solid phosphatide into 3-5 times pts.wt. water is treated with phospholipase A2 and this treated liquid is mixed with protein and thereafter the mixture is dried to produce an emulsifying agent. The above- mentioned phospholipase A2 is enzyme which hydrolyzes ester part of fatty acid of the center of glyceride constituting phosphatide and it may be used in such a form as pancreatin contg. phospholipase A2. Further the pH of the aqueous suspension of phosphatide at a time of treatment is preferably regulated to 6-9 and caustic soda and phosphoric acid buffer solution, etc., are used as pH adjustor. |
