PURPOSE:To obtain panose reduced in side-production of isomaltose at a low cost in high purity and yield and a industrial scale, by adding a specific amount of maltosetransglucosidase to maltose and reacting the mixture for a specific time. CONSTITUTION:A specific amount of maltosetransglucosidase is added to maltose in amounts of 150-1,500 units and the mixture is reacted, preferably at pH 5.0-6.0 and 50-60 deg.C for 3-30hr to provide the aimed panose. |
