PURPOSE:To produce a processed mushroom food edible as a snack-like light lunch without impairing taste and flavor of mushrooms, by boiling or steaming edible parts of mushrooms, seasoning the resultant edible parts, freeze dried or vacuum drying the seasoned edible parts. CONSTITUTION:Edible parts of mushrooms, e.g. SHIITAKE mushrooms, etc., are washed with water and foreign materials are removed. The resultant edible parts are then normally boiled or steamed at about >=80 deg.C for about 30min not to impair the flavor and collapse the shape. Moisture of the boiled or steamed mushrooms is subsequently removed and the mushrooms are seasoned by a means of evenly sprinkling an adequate amount of salt, pepper, etc., or dipping the mushrooms in soy sauce for a short time, etc. The seasoned mushrooms are then freeze dried or vacuum dried by a conventional method. |
