PURPOSE:To prepare a pasty protein material or protein food effectively utilizing the residual meat or crust of crustaceans, by deactivating enzymes existing in crustaceans, finely crushing the crustacean and treating with a protein decomposition enzyme or microorganism. CONSTITUTION:The body, head or whole part of crustacean such as crab, shrimp, etc., are steamed or boiled to deactivate enzymes such as discoloration enzyme or autodigestion enzyme, etc., contained therein. The crust and shell of the crustacean are finely pulverized before, after or simultaneous to the heat-treatment to an extent not to give rough feeling to the palate. The obtained slurry meat is added with a protein-decomposing enzyme and/or microorganism and uniformly mixed to obtain the objective pasty material or food. |
