PURPOSE:To produce a large amount of a soybean milk coagulating enzyme inexpensively, by cultivating a bacterium capable of producing the soybean milk coagulating enzyme in a medium containing Casamino-acid, etc. CONSTITUTION:A bacterium capable of producing a soybean milk coagulating enzyme, such as bacillus of Bacillus licheniformis, is treated with nitrosoguanidine to give a variant, which is inoculated into a medium consisting of an inorganic salt medium, yeast extract, Casamino-acid and noncontrolled soybean milk and cultivated at 45 deg.C under an aerobic condition for 48-72hr and the soybean milk coagulating enzyme is collected from the culture filtrate. |
