PURPOSE:To suppress occurrence of molds, etc., without breaking soft periderm of pickled UME (plum), cracking flesh and impairing hardness unique to crispy UME (plum), by packaging low-salted and pickled UME (plum) in a container resistant to high temperatures and thermally sterilizing the UME under a high pressure. CONSTITUTION:Low-salted UME (plum) is packaged in a container resistant to high temperatures and thermally sterilized under a high pressure, preferably 1.6-1.8kg/cm<2> pressure, preferably at 90-108 deg.C for 5-10min. |
