In a method for detection of meat texture, the surface of the meat is illuminated in at least two directions, which in a common illumination plane are essentially perpendicular to a base for the meat. A loose texture manifests itself by deep cracks 8, 9, 10, for example, in the fish fillet shown in Figures 3 and 4. By illuminating the surface of the fillet in the directions shown by 11 and 12 in Figure 4, the depressions 8, 9, 10 will produce so great a contrast when taking a picture of the surface that the picture information can be electronically processed and utilized to control equipment either to reject the fillet or to cut away the damaged areas. <IMAGE>
