<p>A food for controlling calorie intake, which has a reduced amount of carbohydrates and contains low-calorie cereals, water-soluble edible fibers, and proteins having an isoelectric point in an acid region in predetermined amounts corresponding to an intended calorie intake. The water-soluble edible fibers and the proteins are contained in such amounts that, when an aqueous solution of the food comes into contact with a gastric juice, the solution will gel. This food has calories of a half or less of rice gruel and stays for a prolonged time in stomach, so that it is suitably used as food for patients of obesity or diabetes. Low-calorie cereals are sugar-free cereals obtained by removing sugar materials from boiled rice through extraction. Preferable water-soluble edible fibers are carrageenan and guar gum, and preferable proteins are casein and its salt.</p> |
