PURPOSE:To prepare the titled SHIRATAKI (noodles made from devil's tongue starch) having agreeable toughness and easily seasonable texture, at a low cost, by adding a hot-water mixture of KONJAK (starch of devil's tongue) powder of a specific temperature to KONJAK powder, stirring the mixture, letting stand to attain a semi-gelatinized state, kneading with lime water and extruding the product in the form of threads. CONSTITUTION:Hot-water mixture of KONJAK powder is added to KONJAK powder at 15-40 deg.C, stirred and left standing for 10-40min according to the temperature to obtain a semi-gelatinized KONJAK paste, which is kneaded with lime water in a kneader. The kneaded paste is extruded in the form of threads by passing through a mesh plate, etc., and boiled in hot water at 65 deg.C to obtain the objective wavy SHIRATAKI. The SHIRATAKI contains a number of transparent bubble patterns, has large specific surface area and can be easily seasoned with a seasoning penetrated into the core part of the SHIRATAKI. |
