For the differential removal of inactive yeast cells there is successive removal from the fermentation broth of, in each case, a portion which contains yeast cells and is fed to an apparatus which is under reduced pressure and where the active cells are scooped off the surface in order, after passing through a centrifugal separator, to return to the fermentation broth. Used for this purpose is a reduced pressure tank (6) with an inclined floor (7) at whose end there is provided a cutting plate (8) for dividing the yeast stream. <IMAGE>
