PURPOSE:To prepare a frozen food which can be heated with microwave radiation without causing uneven heating, by placing a frozen material having specific water-content at the center of a food and freezing the food. CONSTITUTION:The objective frozen food is prepared by placing a frozen material having a water-content of >=70wt%, preferably >=90wt% at the center of a food and freezing the food. The frozen material to be placed at the center of the food is water (ice) which may contain proteins, starches, sugars, oils and fats, tasty substances, perfumes, spices, seasonings, acidulants, emulsifiers, stabilizers, inorganic salts, thickeners, gelling agent, etc., or subsidiary food raw materials such as fruits, vegetables, meat, etc. The frozen food having a frozen material at the center can be produced e.g. by placing a frozen material such as ice optionally containing subsidiary components directly at the center of a food and freezing the food after forming, or injecting the above composition in the form of unfrozen liquid or gel with an injector into the central part of a food and freezing the food. |
