PURPOSE:To produce novel alpha-amylase capable of decomposing starchy alpha-glucan mainly to maltose, by culturing a microbial strain belonging to Bacillus genus. CONSTITUTION:A microbial strain belonging to Bacillus genus and capable of producing a novel alpha-amylase, e.g. Bacillus thermoamulolique-faciens KP1071 strain (FERM P-8477) is inoculated in a nutrient medium and cultured at 6.5-8.5 pH and about 45-60 deg.C under aerobic condition. The objective novel alpha-amylase can be separated from the filtrate of cultured liquid. |
