PURPOSE:To obtain the titled food having the unique taste and flavor of cuttlefish and novel texture and utilizable in various fields, by removing skin from raw cuttlefish or boiled cuttlefish, grinding the cuttlefish in the form of paste, compounding with starch, salt, etc., and forming the mixture in the form of dried sheet. CONSTITUTION:Skin is removed from a raw cuttlefish and the obtained body meat, fin, head, leg, soft shell, etc., are added with small amount of salt and water. The mixture is ground to obtain emulsified paste and mixed with a binder such as starch and, if necessary, additives such as seasoning, ground fish meat, etc. The obtained raw material for sheet is formed in the form of a film, etc., by casting a colloidal liquid thereof, forming a paper from short fibers spun through a particular nozzle or coating on a releasable sheet. The sheet is dried to a water-content of about 8-15wt% to obtain the objective product. Various kinds of sheets can be produced by selecting the conditions for the preparation and forming of the raw material, drying method, post- treatment method, etc. The conditions are selected so as to give a sheet suitable for secondary processing. |
