An emulsion high in nutrients and energy and suitable for use as a dietary supplement for health care purposes, and a process for producing such an emulsion. The emulsion is provided and eaten in the frozen state like ice cream, and it contains 0.5 - 9% fat, 5 - 10% proteins, up to 1% minerals or salts, 15 - 35% carbohydrates and up to 0.5% vitamins, and medically beneficial microorganisms. The product can contain hydrolysed starch for adjusting the viscosity, and a glucose polymer for controlling the osmolality of the product. In the said process, the minerals and the salts are first dissolved in water, the proteins are then quickly added, after which the other ingredients are admixed in succession. |
