PURPOSE:To remove the bitter taste of glycerol from a food containing glycerol as an additive, by adding a specific amount of sodium acetate to the food. CONSTITUTION:The bitter taste of a glycerol-containing food is removed by adding 0.3-1.0wt% of sodium acetate to a glycerol-containing food (effective to a nonfreezing food containing preferably >=5wt% of glycerol).
