PURPOSE:An unbleached bottle gourd (Lagenaria siceraria Standl.) food, having a specific number or less of normal viable cell count as well as improved preservation quality, negative to Escherichia coli group and salmonella and extremely safe for food sanitation without deteriorating nutritive value. CONSTITUTION:A bottle gourd (Lagenaria siceraria Standl.), obtained by drying sliced pulp of bottle gourd to give <=50% moisture content, sterilizing preferably under 0.2-0.4 kg/cm<2> for 5-20 min to give a material, having 5X10<3> normal viable cell count/g, negative to Escherichia coli group and salmonella and <=8% moisture content and, as necessary, forming the resultant material into the shape of belt, powdery granule or tablet and having many applications, e.g. confectionery, sprinklings, bean curd, etc. |
