This invention discloses a novel peptidase secreted by yeast, more particularly Saccharomyces yeast, and a process for producing the same. When allowed to act on a peptide containing amino acid sequence of leucine - lysine (Leu - Lys), this peptidase cleaves the peptide bond specifically between Leu and Lys via hydrolysis. Said peptidase can be obtained as follows: immobilize Saccharomyces yeast on an immobilizing support at high density, culture it, and purify the enzyme from the culture solution.
