PURPOSE:To obtain the titled novel food having excellent visual feeling, no grassy smell peculiar to seaweeds and taste quite different from that of the original seaweeds, by dissolving the seaweeds and adding a coagulant and then a protein-containing component to coagulate the dissolved seaweeds. CONSTITUTION:(i) Seaweeds are cut or ground and (ii) an alkali metal salt in an amount of 0.2-5% based on the component (i) is added to completely or partially dissolve the seaweeds by heating while stirring. (A) 3-20pts. resultant component is then blended with (B) 80-90pts. protein-containing substance such as soybean milk, cow's milk, etc., and (C) 0.1-0.5pt. alkali earth metal salt such as calcium carbonate, magnesium carbonate, etc., and the blend is heated at >=80 deg.C for 20-60min and then solidified by cooling or allowing to cool to provide the aimed food. |
