The process for assaying an amino acid, especially an essential amino acid, present in a protein chain consists, in a first stage, in cutting the said chain into fragments so as to place at the end of the fragments the amino acid to be assayed; in a second stage, the said amino acid is liberated from the said fragments, and, in a third stage, the amino acid thus liberated is assayed.
