PURPOSE:An enzyme is used to effect the reaction between a polyol not bearing any hydrogen atom on the beta-carbon atoms and a fatty acid whereby a polyol ester with steric hindrance is efficiently produced. CONSTITUTION:The reaction of a polyol with steric hindrance, bearing no hydrogen atoms on the beta-carbons such as pentaerythritol or trimethylolpropane, with a saturated or unsaturated fatty acid is carried out in the pressure of a lipase, preferably originating from a microorganism, in a binary phase system of water/organic solvent and the polyol ester formed is separated.
