Dehydrated broths and soups are made by coating the hygroscopic ingredients, e.g. protein hydrolysates, meat extracts and yeast extracts, with fat at 70 deg. C minimum, adding the remaining ingredients and dispersing in a phase consisting of starch or flour from cereals or tubers in amount of 25-50%. |
